I love breakfast. It's the first thing I think of when I open my eyes in the morning and I'm sure is the soul reason I leap out of bed without a second thought.
At the weekend I needed to get some more greens in as I wanted a good start to the day with my detox protocol. I only had a banana and bunch of celery in the way of smoothie ingredients so with low expectations I wizzed them together in the blender. To my surprise it was actually pretty yummy! It would have been extra special with some spinach in as well!
A little later I was feeling peckish again so I soaked some chia seeds to make a chia pudding. Check out this article on the benefits of chia. To the chia I added some almonds, blueberries and water. 10 minutes later I took my first bite and the cold texture really wasn't working for me. I can't currently have porridge (oats aren't allowed on the detox) however I had an idea. I had some gluten free porridge in the cupboard. It is nowhere near as creamy, dense and filling as oats so I figured the chia would bulk it out and hey presto it was a winner. Here's how to make chia porridge.
Put 1 tablespoon of chia in a bowl and add about 1/3 cup of water, allow to sit for 10 - 15 minutes
When the chia is ready pour 1/4 - 1/3 (depending on how hungry you are) of gluten free porridge into a saucepan, add the chia and a drop more water (rather have it thick to start with and add more water if you need after a few minutes). Add in any nuts you fancy (I usually like macadamias and almonds), cinnamon and ginger, sultanas / dates. Stir over medium to low heat for 3-4 minutes to let it thicken. Afterwards I sliced a banana for topping.
You could add any nuts or seeds, any fruit, spices (i.e. nutmeg, ginger, cinnamon), honey etc.... Whatever your favourites are.

Why no oats? Apart from them being detox illegal, I find oats can sometimes be a little hard to digest and although the jury appears to be out on whether oats contain gluten or not (it may be that they are made somewhere that also mills gluten grains) sometimes it's good to have a change. The gluten free grains (or seeds as they really are) include buckwheat, millet, amaranth and quinoa. You could find a gluten free porridge with a mix of these or just buy one or more of the flakes individually. They are beautifully light to digest and keep you feeling springy.
